Food-grade sodium bicarbonate in a 1 kg pack. The distinction matters: a lot of what is sold as baking soda in India is technical or cleaning grade, and the difference is purity, not price.
For baking and Indian cooking
Baking soda is a leavening agent. With an acidic ingredient such as curd, buttermilk, lemon juice or vinegar, it releases carbon dioxide, and those bubbles lift a batter as it bakes. Use it in cakes, cookies, muffins and pancakes, and a pinch in dhokla, idli or khaman batter for a lighter set. Bake soon after mixing, because the reaction starts on contact.
Baking soda or baking powder?
Baking soda is pure sodium bicarbonate and needs an acid to activate. Baking powder already contains one. Recipes are written for one or the other; they are not 1:1 interchangeable. The full comparison is in baking soda vs baking powder.
